Spicy pork with shiitake mushrooms and leek

Ingredients for 4 servings:

  • 400 g pork fillet(s), cut into strips
  • 50 g shiitake mushroom(s)
  • 2 m.-large onion(s), roughly diced
  • 2 stalk(s) leeks, sliced
  • ½ tsp salt
  • 1 tsp sugar
  • 1 cup water
  • 1 tbsp cornstarch
  • Oil for frying
  • 4 tbsp soy sauce
  • 2 tbsp rice wine
  • 1 tsp chili sauce
  • 1 tsp Chinese spice
  • 1 tsp oyster sauce

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Mix the marinade ingredients and add to the meat. Marinate for approximately 20 minutes. Finely slice the mushrooms. Fry the marinated meat in hot oil for 3 minutes. Add the mushrooms and fry for 3 minutes. Mix the water with the cornstarch, salt, and sugar. Pour over the meat, stir, and let it thicken slightly. Stir in the onion and leek and cook for 5 minutes. Season again with soy sauce and rice wine. Serve with rice.
