Spicy Seared Tuna with Green Asparagus (Manuel Cortez)

tuna
- 1 kg Tuna sushi quality
- 1 shot Soy sauce
- 1 shot Sesame oil
- 0,5 piece Ginger
- 1 bunch Chives

- 1 bunch Asparagus green
- 1 pinch Salt
- 1 pinch Pepper
- 1 shot White balsamic vinegar
- 1 pinch Sugar
tuna
- Marinate the tuna in soy sauce for about an hour. Then pat dry and rub with sesame oil. Spread some sesame oil on a grill pan with a brush. Then fry the fish in a very hot coated grill pan for a maximum of 2 minutes and turn regularly. Then put the pan aside and let the tuna steep.
- In the meantime, peel the ginger and grate it finely. Put some soy sauce on the preheated plates and add the sliced tuna. Scatter the ginger and chives over the top.
asparagus
- Cut off the green asparagus at the bottom, wash. Sear in a hot pan coated with sesame oil until lightly browned. Salt and pepper a little. Then deglaze with a little white balsamic vinegar, pour a good pinch of sugar over it and mix.
