Spicy sherry prawns

Ingredients for 4 servings:

  • 12 large shrimp
  • 2 tbsp olive oil
  • 2 tbsp dry sherry
  • 1 pinch(s) of cayenne pepper, or 1 dashes of Tabasco
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes

Twist off the heads of the shrimp. Remove the shells, leaving the tails intact. Cut a small incision along the back and remove the dark intestinal threads. Rinse the shrimp and pat dry. You can also use frozen, pre-cleaned shrimp. Heat the olive oil in a pan. Fry the shrimp over medium heat for 2-3 minutes, stirring occasionally, until pink. Deglaze with sherry and season to taste with cayenne pepper or Tabasco, salt, and pepper. Empty the contents of the pan into a shallow dish and serve immediately.
