Ingredients for 6 servings:
- 500 g carrot(s)
- 300 g potatoes
- 1 onion(s)
- 30 g butter
- 1 tsp chili powder
- Salt and pepper, freshly ground
- curry powder
- 1 liter vegetable broth
- 200 ml crème fraîche (cream balance)
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Peel and wash the carrots and potatoes, drain, and roughly dice. Melt the butter in a large saucepan and sauté the vegetables while stirring. Add the spices and sauté briefly. Then add the broth, bring to a boil, and simmer gently with the lid on for about 20 minutes. Purée the soup and stir in half of the Creme Balance. Season to taste with salt, ladle into soup bowls, and serve with the remaining Creme Balance.
