Ingredients for 1 servings:

  • 1 kg tomatoes (aromatic vine tomatoes)
  • 1 shallot(s)
  • 1 tsp salt
  • 1 tbsp honey
  • 1 tbsp Balsamic vinegar, very good
  • Chili, to taste
  • 1 tbsp chili sauce
  • 15 g sugar-free gelling powder, e.g., Konfige, Arche or Agar-Agar, corresponding to the weight of the tomatoes
  • 1 bunch basil, finely chopped
  • 1 piece(s) ginger, finely grated

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

ideal with mozzarella, as a dip or as a spread

Peel and finely chop the tomatoes. Finely chop the shallots and sauté in olive oil until translucent. Combine the tomatoes, ginger, spices, and jam. Cook for 10 minutes, stirring constantly. Stir in the basil. Pour into small jars and seal.
