Spicy tortilla cheddar casserole with bacon

Ingredients for 2 servings:

  • 150 g tortilla chips
  • 100 g Cheddar cheese, grated
  • 400 ml tomatoes, pureed
  • 50 g crème fraîche
  • 1 spring onion(s)
  • 2 peppers, green
  • 2 tbsp Italian herbs, dried
  • 3 slices of bacon
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 ciabatta

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 23 minutes; Total time approx. 53 minutes

Preheat the oven to 200 degrees top/bottom heat. Halve the ciabatta lengthwise. Peel the garlic clove and finely chop or press it. Peel the onion and dice it finely. Sauté both in a small pan with olive oil for 3 minutes until translucent and deglaze with the passata. Add the herbs and let the sauce simmer for 5 minutes. Meanwhile, grease a baking dish (approx. 25 x 15 cm) with butter. Wash the spring onion and slice it into small rings. Slice one of the peppers into small rings. Pour the warm sauce into the dish and stir in the crème fraîche and the pepperoni rings. Then add all but 2 tablespoons of the cheddar cheese and mix well. Carefully fold in the tortilla chips with a fork until everything is evenly mixed. If there are too many large pieces sticking out of the top, break them up. Otherwise, anything that sticks out too high will become too crispy. Now place the bacon slices on top and the second pepperoni. Sprinkle the remaining cheese over the top. Bake the casserole with the ciabatta for 15 minutes in the oven and garnish with the spring onion rings. Spicy ketchup is a great dip. Enjoy the tortilla casserole with a ciabatta spread with ketchup.
