Ingredients for 4 servings:
- 3 zucchini, approx. 900 g
- 1 orange(s)
- 1 can coconut milk
- 1 onion(s)
- 2 cloves garlic
- 1 tsp curry paste, green
- 1 tsp chili powder
- salt and pepper
- 1 tsp curry powder
- 1 tsp turmeric
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Peel and quarter the onion. Peel and halve the garlic. Peel and roughly dice the orange. Wash and roughly dice the zucchini. Cook the onion, garlic, orange, and zucchini in a medium saucepan with 2 tablespoons of oil for 5-10 minutes. Add the coconut milk and simmer briefly. Then add the spices and blend. Taste and adjust seasoning if desired. Serve with bread or crème fraîche.
