Spinach casserole with egg nests

Ingredients for 4 servings:

  • 500 g creamed spinach, frozen
  • Salt
  • nutmeg
  • 500 g potato(s), waxy
  • 4 eggs
  • 80 g mozzarella, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Thaw the creamed spinach. Wash the potatoes and boil them in their jacket potatoes for 15-20 minutes. Let them cool, peel them, and cut them into small cubes. Place the spinach in an ovenproof dish approximately 20 cm in diameter, fold in the diced potatoes, and season with nutmeg. Make 4 small indentations in the spinach. Crack the eggs and crack one egg into each indentation. Sprinkle the casserole with cheese and bake in a preheated oven at 160°C (convection oven) for approximately 30 minutes.
