Spinach pita with tomato sauce

Ingredients for 4 servings:

  • 1 pack of puff pastry, rolled out on baking paper
  • 500 g spinach (spiced spinach), frozen
  • 2 large tomatoes
  • 1 jar sauce (tomato sauce)
  • 1 egg yolk
  • 200 g feta cheese
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Thaw the spinach in a pan. Preheat the oven to 185°C (top/bottom heat). Grease a baking dish and line it with half of the puff pastry. Dice the feta cheese and slice the tomatoes slightly thicker. Season the thawed spinach with salt, pepper, and nutmeg, then pour it into the baking dish on top of the puff pastry. Sprinkle the diced feta cheese on top. Finally, top with the tomato slices. Cover everything with the second half of the puff pastry and brush with egg yolk. Bake for 50-60 minutes. Just before the pita is ready, heat the tomato sauce in a pan. Serve the spinach pita with the tomato sauce.
