Ingredients for 4 servings:

  • 150 g low-fat curd cheese
  • 50 g sunflower oil
  • 3 tbsp milk
  • ½ tsp sugar
  • 1 tsp sea salt
  • 1 egg(s)
  • 300 g wheat flour
  • 1 tbsp baking powder
  • 5 tbsp tomato paste
  • 2 garlic cloves
  • 1 ½ kg leaf spinach
  • 5 tomatoes
  • 1 tbsp oregano, shredded
  • 1 tsp thyme, dried
  • nutmeg
  • salt and pepper
  • n. B. cheese, grated
  • Grease for the tray

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 15 minutes

For the dough, first mix the quark with oil, milk, sugar, salt, and egg. Mix half of the flour with the baking powder, add, and mix. Then knead in the rest of the flour. Let the dough rest in the cold for at least 1 hour. Roll out the dough on a greased baking sheet, spread with the tomato paste, and sprinkle with the finely chopped garlic. In the meantime, clean the spinach and blanch it in salted water for about 1-2 minutes. Then rinse with cold water, drain well, and spread it on the pizza. Now season with salt, pepper, oregano, thyme, basil, and nutmeg. Slice the tomatoes and arrange them on top. Season again with garlic powder and sprinkle with grated cheese. Preheat the oven to 220 degrees Celsius and bake the pizza for about 30-40 minutes.
