Spinach with fried paneer

Ingredients for 5 servings:

  • 500 g paneer (Indian cream cheese)
  • 1 cup oil
  • 2 onions
  • 5 garlic cloves
  • 1 kg creamed spinach
  • 1 ½ tsp turmeric powder
  • 1 tsp chili powder
  • 2 tsp spice mix (Punch Pooran)
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 2 tsp salt
  • ¼ cup cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the paneer into cubes of approximately 1 cm. Finely chop the onions and garlic. Rub the paneer cubes with ½ teaspoon of turmeric and ½ teaspoon of salt. Heat the oil in a large pot and fry the paneer, remove and set aside. Add a little more oil and return to the heat if necessary. Briefly fry the punch pooran, then add the onions and garlic and fry until translucent. Add the spinach and sauté, stirring frequently. Add the remaining spices and finish with cream. Add the paneer cubes and heat briefly again in the spinach. Serve warm.
