Split pea hummus with wild garlic paste

Ingredients for 10 servings:

  • 500 g split peas, dried
  • 200 g sesame paste
  • 100 g sunflower oil
  • 100 ml lemon juice
  • 70 g wild garlic paste
  • 2 tsp salt
  • 2 tsp cumin powder
  • 2 tsp cayenne pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 40 minutes

simple, vegetarian, vegan – can be cooked

Cook split peas with three times the amount of water for about 1.5 hours. Drain and reserve the water. Blend all ingredients with a hand blender or in a suitable food processor/blender until smooth. If necessary, thin with the cooking water to the desired consistency; I haven’t had to so far. Makes about 1.75 liters of split pea hummus. Can be stored in jars and boiled at 99°C for 90 minutes.
