Ingredients for 5 servings:

  • 450 g pasta (corkscrew)
  • 2 spring onions
  • 1 kohlrabi
  • 1 bulb(s) of fennel
  • 1 can artichoke hearts
  • 170 g white asparagus
  • 1 cup vegetable broth
  • Thyme
  • 1 dashes lemon juice
  • 1 tbsp sauce (sweet and sour), as desired
  • lots of Maggi

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta until al dente. Slice the spring onions and dice the remaining fresh vegetables, and sauté them in a hot pot with the vegetable broth. Drain the asparagus. Halve the artichokes. Once the pasta is done, drain it and add it to the pot along with the remaining vegetables. Mix to taste and serve. A gypsy schnitzel is a delicious side dish. However, it can also be enjoyed without meat and makes a lovely light main course.
