Spring vegetables with green asparagus à la Eddie

Ingredients for 2 servings:

  • 1 bunch of asparagus, green
  • 2 kohlrabi
  • 2 spring onions
  • 2 stalks of celery
  • 10 cherry tomatoes
  • olive oil
  • salt and pepper
  • Sugar
  • Balsamic vinegar
  • Parsley, fresh

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Food combining, delicious

First, peel and dice the kohlrabi. Cut the celery into bite-sized pieces, wash the asparagus and also cut it into bite-sized pieces. Briefly fry the kohlrabi in olive oil until crispy and sauté until al dente. Add the celery and sauté. Season with salt and pepper. Add the asparagus and sauté for a few minutes. Sprinkle everything with a little sugar and caramelize briefly. Add the cherry tomatoes and finely chopped spring onion and deglaze with a generous splash of balsamic vinegar. Simmer slightly and finally add freshly chopped parsley. Enjoy as a side dish or simply on its own!
