Ingredients for 1 servings:

  • 1 kg sugar
  • 1 liter of water
  • 1 lemon(s), untreated
  • 25 g citric acid
  • 4 handfuls of spruce shoots (May shoots)

lemony refreshment from May shoots

The spruce tips should be light green and 4-5 cm long, and should be harvested in May. Wash and chop them into small pieces, then place them in a large, sealable glass container. Cover with sugar and citric acid. Wash and slice a lemon, then add it. Fill everything with 1 liter of water and stir well. The syrup should stand in a cool, dark place for at least 48 hours. Stir regularly until all the sugar has dissolved. Then strain everything and pour into screw-top jars/bottles. Stored in the refrigerator, it will keep for about 4-6 weeks. Diluted with carbonated water, it makes a refreshing summer drink with a delightfully lemony flavor.
