Ingredients for 2 servings:
- 8 sheets of rice paper
- 5 small broccoli florets
- ½ zucchini
- 1 spring onion(s)
- 2 eggs
- salt and pepper
- Ginger powder
- Coriander powder
- Soy sauce

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

The vegetables are cut into very small pieces or thin slices. Whisk the eggs in a bowl, season well with salt, a little pepper, ginger, and coriander, and fold in the chopped vegetables. Moisten the rice paper sheets individually with water until they become pliable. Place the filling into the rice paper and wrap them into small rolls or parcels. Steam the vegetable parcels for approximately 20-25 minutes. Serve with soy sauce.
