Steffi's Lime Chicken

Ingredients for 2 servings:

  • 200 g chicken breasts
  • 300 ml coconut milk
  • 2 limes
  • 1 garlic clove(s)
  • 2 tbsp oil (rice oil)
  • ½ liter of rosé wine
  • ½ cup water
  • Turmeric powder
  • 1 tsp honey
  • Thyme
  • salt and pepper
  • Paprika powder, sweet
  • 2 tbsp, heaped vegetable stock
  • Balsamic cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash the chicken breasts and cut into strips. Place the strips in a little rice oil in a deep dish, sprinkle with some thyme, and fry in a pan. Add a little paprika. Peel the garlic clove, cut it into 4 pieces, and add it to the pan with the meat. When the meat is almost cooked through, sprinkle with enough turmeric until it takes on a nice, all-over yellow color, then season with salt and pepper. Deglaze everything with rosé wine. Add the water and coconut milk to the pan. Halve the limes, squeeze the juices, and add them to the sauce (if you like it even more tangy, you can use ready-made lime juice). Add the honey and a small dash of balsamic vinegar to the sauce. Finally, season the dish with vegetable broth. Suitable side dishes include rice, salad, broccoli, and soybean sprouts.
