Strawberry Meringue Cake

The perfect strawberry meringue cake recipe with a picture and simple step-by-step instructions.

  • 400 g Fresh strawberries
  • 225 g Flour
  • 0,5 packet Baking powder
  • 200 ml Cream
  • 125 g Sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 4 Eggs
  • 100 Sugar
  1. Wash the strawberries, cut them in half and quarter them. Line a baking sheet (33 + 25 cm in diameter) with baking paper. Preheat the oven to 200 ° C (fan oven 180 ° C).
  2. Separate the eggs. Mix the flour and baking powder, add the remaining dough ingredients (except for strawberries and egg white), mix everything with the hand mixer to form a smooth dough. Spread the dough on the baking sheet. Spread the strawberry pieces on top. Bake in the oven on the middle rack for about 20 minutes.
  3. In the meantime, beat the egg white with a pinch of salt until stiff, pour in the sugar. Spread the egg white mixture on the cake, finish baking the cake for another 15 minutes. Let cool, cut into pieces and serve.
