Strawberry Panna Cotta with Mango Sauce …

  • 200 g Whipped cream
  • 1 packet Vanilla sugar
  • 1 Vanilla pod
  • 4 leaf Gelatin white
  • 150 g Fresh strawberries
  • 1 tablespoon Powdered sugar
  • 1 tablespoon Grappa
  • 1 Fresh mango
  • 1 Fresh lime
  • 1 tablespoon Powdered sugar
  • 2 Centiliters Bacardi rum
  1. Wash, clean and chop the strawberries. Mix with powdered sugar and grappa. Let it steep for 10 minutes. Soak gelatin in cold water.
  2. Scrape out half a vanilla pod. Put the cream with vanilla sugar, vanilla pod and pulp in a saucepan. Bring to the boil briefly and simmer gently for 10 minutes. Remove from heat and pour through a sieve.
  3. Squeeze out the gelatine well and dissolve it in the warm cream. Puree the strawberries and stir in. Fill in silicone molds rinsed with cold water and put in the cold for about 3 hours.
  4. Peel half a mango, cut into wedges from the core, dice. Squeeze 1/2 a lime. Mix the mango, lime juice and powdered sugar in a saucepan and briefly bring to the boil. Simmer gently for about 10 minutes. Let cool down. Add the rum and puree the whole thing.
  5. Carefully remove the panna cotta from the molds. Arrange on plates together with the mango sauce. Garnish as you wish.
