Strawberry quark cake

Ingredients for 1 servings:

  • 1 kg strawberries
  • 500 g low-fat curd cheese
  • 250 g yogurt (1.5% fat)
  • some mineral water
  • 1 cake base
  • some sweetener
  • 21 sheets of gelatin

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Bake or buy a tart base. Purée half of the strawberries. Measure out 0.5 l, sweeten to taste (with sweetener), and thicken with 6 leaves of dissolved gelatin. Place a cake ring on the tart base and pour the strawberry mixture onto it, allowing it to set. In the meantime, whisk the quark with a little mineral water until creamy, add the yogurt, and sweeten to taste. Reserve 12 strawberries, chop some of the remaining strawberries, and purée the rest to make 0.3 l of strawberry purée. Dissolve 15 leaves of gelatin, mix with the strawberry purée and the quark mixture, and fold in the chopped strawberries. When the mixture begins to set, pour it onto the tart base. After a few hours, remove the cake ring and decorate with the 12 strawberries. Because the tart is very refreshing and low in calories, it’s a hit with us. In the fall, we simply replace the strawberries with other fruits or elderberry juice.
