Ingredients for 4 servings:
- 350 g pasta (Strozzapreti), ready-made or homemade
- 250 g flour, type 405 or 550, or Italian type 00
- 75 g semolina, durum wheat
- 1 egg(s)
- 1 tbsp olive oil
- n. B. water
- 1 pinch of salt
- 250 g sausage (salsiccia) or fresh bratwurst
- e.g. olive oil, for frying
- 1 tsp, heaped fennel seeds, finely ground
- 1 tsp coriander, finely ground
- 1 tsp thyme, finely plucked, without stems
- 1 onion(s), finely diced
- 1 garlic clove(s), finely diced
- 1 red bell pepper(s), skinless and seedless, julienne or brunoise cut
- 10 cherry tomatoes, diced
- 1 pinch of chili powder
- 1 pinch of turmeric
- salt and pepper

the “Priesterwürger” pasta with spicy Italian sausage and tomato sauce
Twisted strozzapreti, or priest stranglers, are made as follows: Knead all the pasta ingredients into a dough. Determine the amount of water according to taste; the dough should not be too dry or too wet. Let the dough rest in a cool place for 1 hour, then roll it out very thinly. A pasta machine can be helpful. Fold each sheet of dough twice lengthwise. This gives you a width of about 5-6 cm. Cut strips 1 cm apart and twist each strip loosely between two flat, lightly floured hands without pressing. You can also twist each strip on a floured table with both index fingers placed at either end and twist in the opposite direction. Set aside. Alternatively, you can of course use store-bought pasta. If you can’t get salsiccia, squeeze the meat out of the sausage meat and mix it well with the fennel seeds, coriander seeds, and thyme leaves. Then form small balls the size of marbles and set aside. Sauté the onion, garlic, and bell pepper in oil, add the tomatoes and spices, season with salt and pepper, mix well, and simmer covered for about 5 minutes. During this time, fry the formed sausage meat in 1 tablespoon of oil until lightly browned all over, then add it to the sauce and mix. Finally, add the pasta, cooked al dente, toss everything well, and serve as a primo piatto.
