You can enjoy stuffed dates in both sweet and savory ways. The snack is ideal as a small aperitif before dinner, as a snack with drinks, or as part of a larger buffet. Here are two easy recipes for both types.
Sweet stuffed dates
For this variant, namely the sweetly filled dates, you need six dates, half a banana, three teaspoons of peanut butter, three walnuts or pecans, three cocoa beans, some cinnamon, and sugar.
- First, cut the dates lengthwise and remove the stone.
- Then slice the banana and cut it in half.
- Now fill part of the date halves with the half banana slices. Spread peanut butter on the other part of the date halves. You can also use almond butter here if you prefer.
- Now it’s time for the nuts and cocoa beans. Place a nut and a bean in each of the date halves. Of course, you also have the choice between nuts and cocoa beans.
- Sprinkle the filled dates with some cinnamon and sugar. A little whipped cream mixed with vanilla is particularly delicious.
Hearty stuffed dates
For savory filled dates, take 12 dates, 150 grams of goat’s cream cheese, three tablespoons of orange juice, three tablespoons of yogurt, four sprigs of thyme, 50 grams of walnuts, five tablespoons of maple syrup and some coarse salt.
- Halve the dates and remove the pits. Stir a cream from the goat’s cream cheese, the orange juice, and the yogurt, and taste it with thyme.
- Fill the dates with the fish cheese cream either with a piping bag or carefully with a spoon.
- Chop up the walnuts or buy chopped walnuts directly. Roast them in a coated pan without oil for a few minutes. Turn the nuts regularly.
- Carefully add maple syrup and slowly caramelize the nuts. Keep the stove temperature low, the syrup must not burn. Then sprinkle on the nuts.
- Now put the caramelized nuts on the date halves with the cream cheese.
