Stuffed kohlrabi

Ingredients for 4 servings:

  • 4 m.-large kohlrabi
  • 200 g crème fraîche
  • 100 g Gouda, young, grated
  • 250 g mushrooms (oyster mushrooms)
  • 250 g mushrooms (arm fungus)
  • 1 onion(s)

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel the kohlrabi and scoop out the center (this can also be done with a small spoon). There should only be about a 0.5 cm edge left. Cook the kohlrabi, but not until completely soft, but with a tender bite. Then rinse briefly in cold water to retain the color. Finely slice the mushrooms, dice the onion. Sauté the onion and add the mushrooms. Season to taste. Place the crème fraîche in a saucepan and heat, stirring constantly. When the crème fraîche is runny, add the Gouda cheese and let it melt. Stuff the kohlrabi with the mushrooms and pour the sauce over them. Sprinkle more grated cheese on top, if desired. Bake in the oven at approx. 180°C.
