Stuffed mushrooms

Ingredients for 4 servings:

  • 8 large mushrooms
  • 1 m.-large shallot(s)
  • ½ clove(s) garlic, less or more if desired
  • 150 g cream cheese
  • 2 sprigs of parsley
  • 1 tsp lemon zest
  • salt and pepper
  • 1 pinch of paprika powder
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Clean the mushrooms and remove the stems. Finely dice the stems, garlic, and shallot, and fry in a little olive oil. Then add the chopped parsley and season with salt, pepper, and paprika. Finally, add the lemon zest and let everything cool slightly. Now stir in the cream cheese well. Lightly oil a baking dish with olive oil. Fill the mushrooms with the mixture and place in the baking dish. Bake in a preheated oven at 180°C (convection oven) for approx. 15-20 minutes. Can be eaten warm or cold, and goes perfectly with a light white wine.
