Stuffed zucchini

Ingredients for 4 servings:

  • 2 large zucchini
  • 1 cup rice
  • 3 peppers
  • 1 dash of chili sauce (Piri Piri)
  • salt and pepper
  • Sugar
  • Paprika powder
  • 1 tsp tomato paste
  • 1 package of feta cheese or cheese of your choice

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

simple and vegetarian

Wash the zucchini, trim off the ends, halve, and scoop out the seeds with a tablespoon. Cook the rice as usual. In the meantime, finely dice the bell pepper and one zucchini half. When the rice is al dente, fry it with the vegetables and tomato paste. Season with the spices and piri piri sauce. Place the remaining three zucchini halves in a baking dish and fill with the mixture. Then sprinkle with feta. Bake in the oven at 180°C for about 20 minutes, until the zucchini is tender. This depends on the size, of course. The ones from my garden were very large. Tips: If you like, you can also add tomato sauce to the baking dish. For all meat lovers, you can of course also add minced meat. Onions and garlic could of course also be added.
