Styrian zucchini strudel

Ingredients for 4 servings:

  • 2 small zucchini
  • 120 g bacon
  • 1 onion(s)
  • 1 egg(s)
  • ½ cup sour cream
  • 2 potatoes, boiled, cut into cubes
  • 1 pack of strudel sheets
  • salt and pepper
  • 1 egg(s), for brushing
  • ½ cup sour cream
  • Herbs
  • Garlic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the onion and fry lightly. Dice the bacon and fry briefly. Dice the zucchini and fry briefly in the same pan until translucent. Transfer everything to a bowl and let cool. Add the diced, cooked potato. Mix in 1 egg and half a cup of sour cream and season with salt and pepper to taste. Be careful, as the bacon adds a lot of flavor. Spread the mixture onto the rolled out strudel dough or puff pastry and roll it up. It should be exactly the size of the baking sheet. Brush the strudel with egg and bake at 180°C (top/bottom heat). Add the garlic and herbs to the remaining half of the sour cream and serve with the strudel. Mixed leaf salad is delicious with the strudel.
