Ingredients for 8 servings:
- 750 g pasta, e.g. penne
- 400 g meat salad
- 150 g natural yogurt with 3.5% fat
- 3 red bell peppers
- 1 cucumber(s)
- 1 can of corn
- 2 tsp tomato paste
- e.g. salt and pepper
- Paprika powder, sweet
- 1 small onion(s)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 38 minutes
Cook the pasta until al dente. While the pasta is cooking, chop the bell pepper, cucumber, and onion. Transfer the cooled pasta to a bowl and season with salt, pepper, and paprika. Then stir in the chopped vegetables, corn, and meat salad. Now place the natural yogurt in a small bowl and mix with the tomato paste. If desired, you can add more spices. Pour the dressing over the salad and stir to combine. Best served cold and seasoned.
