Ingredients for 4 servings:
- 125g tofu
- Sea salt
- 2 tbsp vinegar (red wine vinegar)
- 2 tbsp olive oil
- 2 tbsp sesame seeds
- 4 m.-sized tomatoes
- 1 bell pepper(s), yellow
- 2 small zucchini
- 1 bunch of spring onions
- 3 tbsp vinegar (red wine vinegar)
- 4 tbsp olive oil
- 1 garlic clove(s), squeezed
- Sea salt
- Pepper, white
- Fresh chopped herbs of your choice
Instructions
Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes
Cut the tofu into thin strips and toss with sea salt, vinegar, and oil. Marinate for 30 minutes, then mix with the sesame seeds. Quarter the tomatoes, finely slice the bell pepper and zucchini, and thinly slice the spring onion. Mix the sauce ingredients and toss with the vegetables. Arrange on plates and serve sprinkled with the sesame seeds. As a side salad, this recipe serves 3-4 people.
