Ingredients for 2 servings:
- 2 chicken breasts
- 1 ball of mozzarella
- n. B. garlic
- 1 bell pepper(s)
- 750 g potatoes
- olive oil
- salt and pepper
- 100 g yogurt
- 150 g quark
- some mint, fresh
- 1 lemon(s), 4 slices and juice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Line a baking tray with baking paper and preheat the oven to 180°C fan/convection oven. Place the chicken breasts in the center of the baking tray and make several 1cm deep cuts across the width. Roughly slice the garlic as needed and stuff these and the finely chopped mozzarella into the slits in the meat. Place two lemon slices on each chicken breast. Cut the bell peppers and potatoes into bite-sized pieces and arrange them around the meat. Drizzle with a little olive oil, salt, and pepper, and squeeze a few drops of lemon juice over the vegetables. Place the tray in the hot oven and, after about 20-30 minutes, remove everything from the oven when it is lightly browned. In the meantime, mix the quark with the yogurt, mint, salt, pepper, and the remaining lemon juice, then add a dollop of this to each plate.
