Super-quick Brussels sprout soup

Ingredients for 4 servings:

  • 50 g butter
  • 1 medium-sized onion(s), finely chopped
  • 2 packs of Brussels sprouts, frozen, 300 g each
  • ½ liter vegetable broth
  • salt and pepper
  • nutmeg
  • 200 g crème fraîche

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Melt the butter in a saucepan and sauté the onions and Brussels sprouts. Pour in the broth, cover, and simmer over medium heat for about 10-15 minutes. Remove half of the sprouts and puree the rest in the broth. Add a little more broth, if desired. Season with salt, pepper, and nutmeg, and finish with crème fraîche. Add the remaining sprouts and heat through. Serve with croutons, Vienna sausages, cooked ham, smoked pork loin, or fried bacon.
