Sushi Surf'n'Turf with miso mayonnaise

Ingredients for 4 servings:

  • 8 nori sheets
  • 4 handfuls of sushi rice
  • 1 dashes rice vinegar
  • 400 g beef fillet(s)
  • 8 large shrimp
  • 1 cucumber(s)
  • 1 bunch of chives
  • 2 tsp miso paste
  • 4 tsp, heaped mayonnaise
  • some pepper, black
  • n. B. Panko

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Mix the mayonnaise with the miso paste. Cook the sushi rice according to the package instructions with a dash of rice vinegar, then let it cool. Deseed the cucumber (scrape out the seeds with a teaspoon) and slice into thin strips. Sear the beef fillet whole on all sides, then cut into strips, briefly frying the shrimp. Spread each nori sheet with rice as usual, add the steak strips, cucumber, chives, and shrimp, season with pepper, and roll up. Garnish with a strip of miso mayonnaise and, if desired, some toasted panko, cut into pieces, and serve immediately. I serve 2-3 rolls per person.
