Swabian potato salad

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 onion(s)
  • 4 tbsp vinegar
  • 4 tbsp oil
  • 1 tsp salt
  • pepper
  • 1 tsp mustard
  • 125 ml meat broth, warm

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes in their skins, peel them, and slice them. Finely chop the onion and add it to the salad. Mix the vinegar, oil, salt, pepper, mustard, and broth together and pour over the warm potatoes. The salad should have a moist, glossy finish and be served warm. A quick tip: Dice 150g of bacon, fry until crispy, and add it to the salad. I also enjoy the leftovers cold.
