Swedish pea soup

Ingredients for 6 servings:

  • 500 g peas, yellow, e.g. yellow split peas from Denn’s
  • 1 ½ liters of water
  • 1 tsp salt
  • 2 onions, yellow
  • 1 piece(s) ginger, optional
  • 1 tsp marjoram
  • 1 tsp thyme
  • 2 tbsp vegetable broth, granulated
  • 1 small leek(s)
  • e.g. mustard, medium hot

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Ärtsoppa, vegan

Bring the peas to a boil with water and salt, skimming off any foam. Finely chop the onions and add them, along with the piece of peeled ginger. Cook until the peas are tender, about 30 minutes. Then add the marjoram, thyme, and vegetable stock, season to taste, and add salt if necessary. Chop the leek and add it. Serve the soup in bowls and serve with medium-hot mustard. This is simply added to the soup like crème fraîche and eaten. You can also stir it in, but generally, use a little per spoonful.
