Sweet and sour cauliflower

Ingredients for 4 servings:

  • 1 m.-large cauliflower
  • 1 tbsp mustard seeds
  • ½ tbsp salt
  • 2 tbsp sugar
  • 1 pinch(s) of pepper
  • 1 pinch of nutmeg
  • 200 ml table vinegar
  • 1 liter of water
  • ½ m.-sized onion(s) or 1 small
  • 1 tbsp parsley, chopped
  • possibly chili

Instructions

Working time approx. 45 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 5 minutes; Total time approx. 4 hours 50 minutes

Cut the cauliflower florets from the stalk and wash them, cutting them into bite-sized pieces if necessary. You can also use the top part of the stalk. Place the cauliflower in a sufficiently large pot, add vinegar, water, sugar, salt, mustard seeds, and a pinch of pepper and nutmeg. I use regular table vinegar, not balsamic vinegar or anything similar. Bring to a boil and simmer for 4-5 minutes so the cauliflower still has some bite. When the cauliflower is cooked, add the finely chopped onion and parsley. Let it stand for at least 4 hours. Serve cold. If you like it spicier, you can add a little chili.
