Sweet and sour potato soup

Ingredients for 4 servings:

  • 1 kg potato(s), floury
  • n. B. salt water
  • 100 g bacon, if desired
  • some margarine for frying, if necessary
  • possibly pancakes
  • 3 tbsp sugar
  • 1 tbsp vinegar (5%)

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel the potatoes and boil them in salted water in a sufficiently large pot. Do not drain the potato water! Using a masher (please do not use a hand blender!), mash the potatoes in the potato water and stir into a creamy soup. Season to taste with sugar and vinegar. If you like, you can also refine the soup with 100g of bacon. Fry the entire contents of the pan in a little margarine until translucent, then add it to the soup. The soup also tastes delicious with sugar-coated pancakes.
