Sweet and sour sauce

Ingredients for 4 servings:

  • 500 g chicken breast or turkey breast
  • 1 tbsp soy sauce
  • ½ tsp salt
  • ½ tsp paprika powder
  • 4 tbsp cornstarch
  • 1 egg(s)
  • ½ pineapple, fresh or from the can
  • 2 spring onions (bunch onions)
  • 1 bell pepper(s), red
  • 1 tbsp tomato paste
  • 3 tbsp ketchup
  • 2 tbsp soy sauce
  • 150 ml pineapple juice or juice from the can
  • 100 ml water
  • 2 tbsp sugar
  • 2 tbsp vinegar
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 3 tbsp vegetable oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut the chicken breast into strips and toss with soy sauce, salt, paprika, and the egg. Sprinkle the cornstarch over the chicken and mix well. Cut the vegetables and pineapple into pieces. Fry the chicken strips in a frying pan with oil, turning once and fry until crispy, then set aside. In the same pan, sauté the peppers, spring onions, and pineapple, then briefly fry the tomato paste. Add the remaining sauce ingredients except for the water and cornstarch. Mix the water and cornstarch together, add to the sauce, and bring to a boil. Before serving, add the meat to the sauce and heat through. Serve with jasmine or basmati rice.
