Sweet and sour zucchini with noodles

Ingredients for 1 servings:

  • 150 g spaghetti or bavette
  • 300 g zucchini
  • 1 tbsp honey
  • 50 ml balsamic vinegar, darker, more if needed
  • 50 ml white wine vinegar, more if needed
  • 50 ml olive oil, more if needed
  • 1 clove(s) garlic
  • Olive oil for frying
  • Salt
  • Paprika powder
  • chili powder

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook the pasta in salted water according to the package instructions. Cut the zucchini into slices (approx. 0.5 cm) and finely dice the garlic. Sauté the garlic in oil in a pan, add the zucchini slices and sauté. Mix the two types of vinegar and the oil. When the zucchini have become slightly translucent, add a large tablespoon of honey and the oil-vinegar mixture. The honey will melt and then mix with the rest. Season the zucchini with salt, paprika, and chili powder to taste. If it is too sweet or sour, add more vinegar or honey. When the pasta is done, drain and toss with the zucchini. If there is not enough liquid, add more vinegar and oil as needed (again in a 1:1:1 ratio).
