Ingredients for 4 servings:

  • ½ head of white cabbage
  • 2 tbsp fat (lamb fat, from the last roast)
  • 8 long pepper
  • 1 tsp raw cane sugar
  • 1 tsp cumin
  • 2 tbsp oil
  • 3 chili peppers

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes

Finely grate the cabbage. Break the peppercorns into several pieces. Finely slice the chilies. Heat the fat and oil in a deep pot. Add the cabbage along with all the other ingredients and fry slowly. Once the cabbage starts to brown, add a little water. Slowly sauté the cabbage in this way, adding water continuously until the cabbage is cooked but still firm to the bite. This will take 1 to 2 hours, depending on the cabbage.
