Sweet potato casserole with mushrooms and peppers

Ingredients for 4 servings:

  • 2 sweet potatoes, medium-sized
  • 2 onions
  • 500 g mushrooms
  • 250 ml Hollandaise sauce, recipes in the database
  • 250 g cheese, grated)
  • 1 pointed pepper
  • Salt
  • pepper
  • vegetable oil
  • Fried potato seasoning
  • n. B. Cheese, grated

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

with hollandaise sauce

Quarter the sweet potatoes and slice them. Place the slices in a greased casserole dish, brush with a little oil, and season with fried potato seasoning. Bake the potatoes in the oven at 200 degrees Celsius for about 20 minutes. In the meantime, finely chop the onions, mushrooms, and bell peppers and sauté them in a pan with a little salt and pepper. Once the potatoes and the remaining vegetables are ready, toss everything well in the casserole dish, pour over the hollandaise sauce, and then top with the grated cheese. Bake the casserole again at 200 degrees Celsius until the cheese has taken on a light brown color.
