Ingredients for 2 servings:
- 2 tsp curry powder
- 1 tsp paprika powder
- salt and pepper
- 1 sweet potato(s)
- some salad herbs
- 1 carrot(s)
- 100 g peas
- 3 tbsp oil for frying
- 1 small onion(s)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Simply
Peel the sweet potato, carrots, and onion. Thinly slice the sweet potato and carrot. Dice the onion. Bake the sweet potato in the oven at 230 degrees Celsius for 10 minutes. Meanwhile, blanch the peas in salted water for 3-5 minutes. Heat the oil in a pan and briefly roast the curry powder, paprika, and salad herbs. Add the sweet potato slices, carrots, and peas to the pan, stir, and toss. Add salt, pepper, and diced onion to taste. Fry everything briefly. It’s ready to serve.
