Sweet potato fries

Ingredients for 2 servings:

  • 500 g sweet potatoes
  • 3 tbsp olive oil
  • 3 tbsp cornstarch
  • salt and pepper
  • Paprika powder
  • possibly grated Parmesan

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Preheat the oven to 250°C (top/bottom heat). Peel the potatoes and cut them into small sticks (fries). Toss the fries with the cornstarch, oil, and seasoning, and if desired, with the Parmesan cheese. This will add extra flavor. Place the fries on a baking sheet, ensuring they are not touching each other. Place the sheet in the oven and cook for approximately 30–35 minutes. Turn halfway through the baking time. For even crispier fries, wedge a wooden spoon into the oven door 10 minutes before the end of the baking time. Season again with salt and paprika before serving, if desired.
