Sweet potato salad with feta and hummus

Ingredients for 4 servings:

  • 3 large sweet potatoes
  • 1 iceberg lettuce
  • 250 g feta cheese
  • 2 onions
  • 125 g crème fraîche
  • 125g hummus
  • 2 cloves garlic
  • some olive oil
  • some cumin
  • some coriander
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Wash and trim the sweet potatoes, then halve them. Marinate them with olive oil, salt, and pepper and bake in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for 45-60 minutes. Next, peel and finely chop the onions. Place them in a bowl with the garlic, a little olive oil, coriander, cumin, salt, and pepper. Mix the hummus with the crème fraîche. Slice the feta and lettuce. Finally, arrange the lettuce on the plates, then add the sweet potatoes and feta cheese. Top each plate with a generous dollop of the hummus and onion mixture.
