Sweet potato soup

Ingredients for 2 servings:

  • 2 sweet potatoes, approx. 500 g
  • 3 onions, red
  • 1 tbsp curry powder
  • 1 pinch of chili flakes
  • 1 liter vegetable broth
  • 1 tbsp coconut oil
  • n. B. Sea salt and pepper from the mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

with curry and coconut oil

Peel the sweet potatoes and onion and dice them. Heat the coconut oil in a saucepan and briefly sauté the sweet potatoes and onions. Add the curry powder and chili flakes, mix, and sauté. Then pour in the vegetable stock and simmer for about 15 minutes. Then puree with a hand blender and season with salt and pepper.
