Swiss Risi-Bisi with cooked ham and parsley

Ingredients for 3 servings:

  • 1 small onion(s)
  • 150 g cooked ham
  • 250 g peas, fresh or from a can, drained
  • 2 tbsp oil
  • 150 g rice
  • 1 tbsp parsley, chopped
  • 1 tsp salt
  • 500 ml water
  • 40 g butter
  • 1 some Parmesan

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Heat the oil and sauté the finely chopped onion until translucent. Then add the rice and the sliced ​​ham and heat for a few minutes while stirring. Now add half of the parsley, the peas, and the salt, and pour in the water. Cover and simmer over low heat for 15 minutes. Finally, season with butter and the remaining parsley. Sprinkle with Parmesan cheese, if desired.
