Ingredients for 4 servings:
- 250 g meat sausage
- 1 gherkin(s)
- 1 onion(s)
- 1 apple
- 2 carrots, cooked
- 4 eggs, hard-boiled
- 4 tomatoes
- 1 tbsp chives
- 2 tsp mustard, medium hot
- 2 tsp horseradish or wasabi paste
- 1 tsp curry powder
- 1 tsp paprika powder
- 1 tsp pepper
- ½ tsp garlic powder, if desired
- 4 tbsp oil
- 2 tbsp vinegar
- some salt
- some sugar
- 2 tbsp yogurt or mayonnaise or similar, if desired.
Instructions
Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes
Cut the sausage, cucumber, onion, apple, carrots, eggs, and tomatoes into small cubes. Lightly sauté the diced onions for better digestibility. Mix everything together. Mix together the dressing ingredients, except the yogurt, and pour over the salad. Mix briefly again. Sprinkle the chives over the salad, refrigerate, and let the salad marinate for about 2 hours. The salad can also be made the day before. Mix lightly before serving. If it’s too dry, simply add 2 tablespoons or something similar, according to taste.
