Tagliatelle with truffles

Ingredients for 4 servings:

  • 135 g butter
  • 1 clove(s) garlic
  • 400 g tagliatelle, fresh
  • 60 g Parmesan, grated
  • 1 small truffle (white Alba truffle or black Norcia truffle)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Melt the butter in a saucepan over low heat. Add the garlic clove. Heat until the butter foams, separates, and turns light golden brown. Strain the butter through a sieve. Meanwhile, cook the pasta in a large pot of salted water until al dente. Drain and return to the pot. Add the browned butter, Parmesan cheese, a pinch of salt, and black pepper, and toss to combine. Serve on warmed plates. Using a truffle slicer or vegetable peeler, shave a few very thin truffle slices onto each serving.
