Ingredients for 2 servings:

  • 4 eggs
  • 2 tsp mirin
  • 2 tsp soy sauce
  • 1 pinch of salt
  • ½ tsp sugar
  • n. B. Oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

Japanese omelet

Whisk the eggs and all the ingredients well in a bowl. Brush a pan with a little oil, ideally using a brush or a cotton cloth, and then heat it up. Pour some of the whisked egg mixture into the pan and swirl the pan to form a pancake. When the egg sets, roll it up with a spatula. Push the roll to the side of the pan, add more egg, spread it out, and continue rolling. Repeat this process until you have used up all the mixture. Cut the finished roll into bite-sized pieces and serve. Serve with a bowl of rice and vegetables, or you can use the tamagoyaki for delicious bentos.
