Thai cucumber salad

Ingredients for 4 servings:

  • 2 cucumbers
  • 1 bunch of mint
  • 1 bunch of coriander leaves
  • 1 large chili pepper(s), red
  • 1 small onion(s), red
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 60 ml lime juice
  • 2 tbsp sugar

Working time approx. 15 minutes; Total time approx. 15 minutes

quick to make, aromatic and refreshing

Partially peel the cucumbers, leaving strips of peel. Halve or third lengthwise, depending on their size, and slice into fine strips. Pluck the herbs from the stems. Halve the chili pepper lengthwise and remove the seeds, then slice into fine strips. Finely dice the onion. Add everything to the cucumber strips. Make a marinade from the remaining four ingredients and marinate the salad with it just before serving. The salad tastes great with low-fat cooked or fried fish fillet or chicken.
