Thai minced meat dip

Ingredients for 4 servings:

  • 200 g minced pork, lean if possible
  • 2 tbsp peanut oil
  • ½ clove(s) garlic, crushed
  • 1 cm lemongrass, finely chopped
  • 1 tsp, heaped chili sauce
  • 1 cup(s) coconut cream
  • 2 tbsp peanut butter
  • 1 tbsp fish sauce (Nam Pla)
  • 2 tbsp palm sugar
  • 1 tbsp coriander greens, chopped
  • n. B. Crab chips (Krupuk, Kroepoek)
  • n. B. Vegetables, diced, e.g. carrots, cucumbers, peppers, celery

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

As an aperitif before a Thai meal

Fry the minced pork in oil until browned. Add the garlic paste and lemongrass and fry for another 2 minutes. Add the chili sauce, peanut butter, coconut cream, fish sauce, and palm sugar. Simmer until the sauce thickens. Stir in the coriander. Ladle the hot sauce into bowls and serve with the kroepoek and vegetable sticks.
