- 4 duck breasts, 350 g each
- 1 pinch of salt
- Pepper, from the mill

Preheat the oven (top/bottom heat is best) to 80°C. Be sure to check with an oven thermometer! Score the fat layer of the duck breasts in a lattice pattern (do not cut into the meat!), season the duck breasts, place them fat-side down in the pan, and sear. Then turn them over and sear the meat side briefly, then place them in an ovenproof pan in the oven. After 30-45 minutes, the duck breast is ready.
